Q: Can this be used with Windows 7

Yes. I'm using it now with Windows 7. Drivers for it and all!

Q: How tall are the knobs on top? Is that factored in the total height? If it is, how tall is the the right side of the keyboard?

The right side of the keyboard is 2" tall to the flat. The knobs are another 11/16" taller than that. And note that the black keys rise 1/4" above the flat top of the board as well.

Q: Are the keys velocity sensitive?

Yes, I think there are 5 different velocity curves
