Q: What is the difference with stem length i have seen 21/2 vs 4" would there be a better one to use on a smoker

When selecting a probe length, please consider the installation and wall thickness, because the sensing portion of your probe should reach inside the cooking chamber for accurate reading. The sensing length is approximately the last two inches of the stem. Both the 2.5" and 4" stem are popular, and the 4" stem will allow the sensing portion of the probe to reach further inside the chamber. It's also important to consider thermometer placement, because you do not want the probe to come into contact with your food or grill surface.

Q: I have the ok joe highland smoker. this the 4 inch or 2.5 inch better?

If you have the clearance for both (you should), and if your door is not insulated (yours is not), it's really just a matter of preference. 4" will get you closer to the center of the chamber which some believe means a "true-er" temp. But, you also need to have at least 2" from the tip to the nearest piece of meat to assure you don't get inaccurate readings from proximity to cold meat.... so, 4" can also be a bit more restricting than 2.5" (consider how packed you may have the smoker on any given cook). Personally I would choose the 2.5" stem in this scenario, because I don't believe 1.5" deeper makes that much difference. I'd rather be further from the meat, and have slightly more flexibility to load it up when needed. But, if you know that you'll never be that full, then you might as well get the 4" Hope this helps, Scott St. Louis BBQ Store

Q: The threads on my tel-tru bq-300 don't extend beyond the 3/4" thickness of my kamado. do you make a model with longer threads?
