Anthony’s vital wheat gluten is an amazing brand of wheat gluten. The amount you get for small price tag is unbeatable. The vital wheat gluten makes amazing seitan which is a meat replacement food product and the big amount in the bag is perfect for someone who wants to make a lot of seitan. I’d highly recommend Anthony’s vital wheat gluten to anyone looking for a great deal on quantity, quality and cost. 5-5 stars

I cannot stand the idea of paying so much for bread flour, so I got this to turn my all purpose flour INTO bread flour, and it works BEAUTIFULLY. I've also ended up using a homemade pasta recipe that requires the use of vital wheat gluten (and I use this kind), and it's the best pasta that I have ever made. I will absolutely keep this in my pantry at all times from here on out. There is also a LOT of it, so you 100% get your money's worth if you're actually using it.

The back of the packaging does have the copy-paste error that this gluten is... gluten-free. This would otherwise be a 5-star product. However, if you have any allergies to eggs, tree nuts, etc, the nature of that error means you can't trust any claims on the packaging as to potential exposure. This is not an issue for me, but it is very real for many people.That said : I primarily use wheat gluten as a flour additive when bread baking. It means i don't have to store bread and AP flour -- I can adjust the hardness or softness to suit my project. (Nothing to do with this, but adding cornstarch can approximate the softer flours for southern biscuits, etc.)This tastes neutral, has a very even texture, and performs like the brand of gluten I can usually find (a mill, it is red). It's also much more cost effective -- listed at about 20 cents less per ounce when I ordered it.The bag is heavy and does rezip, but I recommend stashing it in another container if you're not undertaking bulk projects. Mostly because I'm terrible at realigning the zip seals on those bags.All in all, save for the packaging manufacturing blurbage, this is a great choice. A 5-star one if you don't have sensitivities or allergies to common food manufacturing items like eggs and tree nuts.
