Definitely g
These knives, designed and using German steel are made in Spain. They are high quality and I'm not sure I could tell the difference between German made vs Spain made knives. Well balanced and feel good in the hand. Very sharp and retain their edge. Easy to rehone the edge if your good with a sharpening steel. I would recommend these. The difference between Spanish and German made is about $100.00.

Ease of cutting
I ordered this for my mother-in-law. But Henckels is always great quality. I have a block set myself. Ease of cutting is great.

Wonderful knive set that takes keen edge, a super value and the 3 you need most
Probably too tough at 4*s but I can't help comparing them to my top end Messermeister German knives that I got as a gift years ago and are not here where I am living at the moment. Comparison is not justified really - one of those costs way more than this set of 3, so this is a superb value. Really wonderful knives. You can get them very sharp. The only reason for 4* is that they I feel I have to be touch them up before I use them. But I like scalpel sharp knives and use a ChefsChoice electric sharpener using the fine ceramic slot. I would recommend these absolutely. Be aware that ChefsChoice can eat cheap knives, and that is NOT a problem with these. Finally, these 3 are all I need in my kitchen (I'm particular about my equipment). No need for any others in addition.

Great Knives and Compare to Professional S
I bought this set because I wanted another paring knife, and another 8" chef knives, and those individual pieces cost as much as this 3 piece set. These knives join my set of existing Professional S set, and I am sure I am not the only one wondering what the difference us between this set of Professionsl versus Professional S because the latter cost about twice as much. Before buying this, I researched in a forum that is about knives and cutlery, and quickly found the difference is only the size of the bolster. Same steel, some hardening, same carbon, etc. So what is a bolster? It's the area after the handle ends until the knife blade starts. The professional S line have a bigger, slightly heavier bolster, which is supposed to be stronger and balance the weight better. So I compared the new 8in to my Professional S 8in, and yes it has a smaller bolster. For my hand, the Professional S does not feel any different. Of course, the new knives are perfectly sharp, so the comparison favors the new ones. If I were a chef knifing hours each day, I might find a difference in comfort or precision handling. But for the home culinary arts enthusiast where budget is a priority, the non-S are great knives.

excellent quality!

The knives have just the right balance between the weight of the blade and the handle that makes it very comfortable to hold. The 6” knife was longer than I thought. Takes a little getting used to.
