Adds kick to almost any meal
I add a half teaspoon to meals most resembling casseroles. It goes well in sauces to add a bit of umami, even Italian or Spanish style dishes.

delicious but pesticides? Added review:
This paste is so good I ate a little on arrival to test it out and could not stop eating it. Giving it four stars as it is made in Japan and therefore most likely has pesticides in it. I lived there and know the Japanese people are adverse to anything but perfection in their fruit which is usually sold looking perfect in individually non-ecologically wrapped wrappings. Forget organic and all its blemishes. I had a Japanese strawberry farmer there tell me no strawberry farmers eat their own strawberries as they are covered in about 8 different pesticides.Added review: I remember when living in Japan if you had a digestion issue you would eat ume boshi plum and that took care of it. Having digestive issues lately I ordered the paste again and started eating 3 teaspoons straight a day. It significantly helped.

Yes Food Wars brought me here
I wanted to make the dish from the Anime Food Wars, which had the onion marinated steak, and umeboshi paste rice. It smells weird on it's own, but trust, in the dish itself its soooooo good. The saltyness vs the sweetness of the plums really takes the rice to another level.

Pure
I buy this because it has nothing but Plums, sea salt and shiso. The flavor seems more intense than that of whole Umeboshi, and it mixes better in my favorite dessert dish: I cook up a batch of Koshihikari rice, substituting a can of coconut milk for part of the water. Dish out into a bowl, melt a slab of cultured butter into the rice, and add about a tsp of Umeboshi paste. Mix well. A great combination of starch, salt, acid, fat and sour. May require a bit of experimentation to get the rice just right with the coconut milk so it comes out in individual grains and not gummy.

Don't order this on Amazon.
It arrived damaged and the paste was everywhere. It isn't returnable. DO not order this. They don't ship it properly and you out of luck if its damaged. It is a great product. Just don't get it here.

Umeboshi Paste
I have been using this brand of Umeboshi paste for years, always the finest quality. I like to eat it on fresh corn on the cob, sounds strange, but give it a try, my whole family uses this paste. We have branched out on other vegetables also.
