頼れるカレーのベース
このガラムマサラの場合、味がしっかりしてるので、単体で手軽にカレーが作れます。電子レンジ圧力鍋でトロトロにした玉ねぎでとろみをつけ、野菜や肉を入れたところに、このガラムマサラを入れるだけで、インド風のカレーになります。塩は必須だし、手持ちの香辛料を好みで加えたり、デミグラスソースで欧風カレーにアレンジしたりもしてますが普通のインドカレーのように、ガラムマサラの前に、ターメリックとか唐辛子粉とかを別で加える等丹念な工程を経なくても、自分的には成り立つので重宝してます。日本のカレールーを使うと、小麦粉と脂っ気のせいで洗い物が大変だし、太るし、煮込む時焦げやすくて目が離せないのでこちらをベースにアレンジする事にしています。
