Authentic Indian cooking!
I gave this to my husband as a gift, after a lot of research about Indian cookbooks. This is an older book, but covers the basics of Indian food for an American cook. We've made a few recipes and they have turned out well. Her writing style is engaging. I really appreciate the introduction sections that go over various ingredients and techniques. A few things seem dated (cilantro is no longer an exotic ingredient to find!), but overall the book stands the test of time and provides a great introduction to authentic Indian cooking.

Wonderful introduction to Indian cooking!
I have always loved this book; my original copy (bought ~ 1980), was literally falling apart from extensive use. I am so glad to find this on Amazon!!!! Excellent recipes and wonderful stories from the author! Her writing style is both encouraging and engaging, and she breaks things down in a very nonintimidating way. If you love both cooking and Indian food, I would highly recommend this and any other cookbook she's written!

Detailed road map to good food
Good fast read with lots of great behind the scenes info on how she "got there" with many of the recipes. Made some of them already and they are doable and tasty.

Great Beginners Guide for Indian Cuisine
Just recieved this book today and decided to make the chicken muglai but with eggs as recommend by Jaffrey.Initially, I was a bit nervous but wow! My husband finished the whole dish! I thought he would complain about the use of ginger and coriander (usually reserved for meats) in an egg dish but he said it was good.Awesome! I'm not a fan of eggs but I had the thick tomato sauce with rice, damn delicious!It's a great read. I enjoy her family stories and how certain recipes came about and why.Also, there is a great break down of spices at the beginning for those not familiar with Indian spices and names.Highly recommend! Will update after a few more recipes.

GREAT RECIPE BOOK FOR LOVERS OF INDIAN QUISINE!
This book was recommended to me by a friend as one that is considered the "must-have" for those who love to cook and love Indian cuisine. A "Must Have" in your recipe book library!!!

Authentic and stimulating recipes
This is an excellent book for experienced and novice cooks. It explains the principles of Indian cookery lucidly and then translates those principles into easy-to-understand recipes for a wide range of dishes. Of the several cookery books written by Madhur Jaffrey this is the most sound and the most instructive. It succeeds in explaining Indian cookery in straightforward but stimulating terms and in helping the reader to avoid the most common error - that of making all Indian dishes look and taste alike. The principles learned are valuable both for Indian and for many other genres of cooking.

It taught me so much!
This book was one of my first Amazon orders. I will always have a special place in my heart for it. Ms. Jaffrey has taught me so much about how to cook Indian foods, although I don't utilize much of her book contents because I am a stubborn vegetarian. One of the dals in this book is a forever favorite, though, one prepared with cabbage and tomatoes.

An Invitation to Indian Cooking
I was led to Indian cooking via a chef, who is a friend of mine. I tasted his version of Chicken Masala, which he credited to Madhur Jaffrey. I had been to a highly regarded Indian Restaurant just the previous evening, ate the same dish, and his was incredibly better. Afterward decided to buy this book. As yet, I have not had a chance to make any of the recipes, but have skimmed through and found many interesting. I've noticed the great detail of the cooking methods and the explanations and interesting food combinations suggested. My only disappointment is, that Madhur's recipe for Chicken Masala is not in this book! But my friend promised to share it with me.
