Q: If you add fruits does it only stay at the top?

No there are 2 inserts. One can be used for ice that has no holes. There is a second one with holes that you could put fruit into to diffuse the water. You can only use one insert at a time however. So you cannot use the ice and the fruit diffuser inserts simultaneously.

Q: What are the dimensions?

I am not sure of the dimensions, however it is really big, like maybe 2-3 gallons big

Q: Looking to put ice on the bottom of the stand to keep liquids cool with out being in the beverage. Can you do this with this product?

You could find a smaller container to place under the tin stand and put ice in that . But ideally the solid ice holder insert that comes with the unit is the best for keeping liquid cold without diluting it.
