Will this spoil if shipped overseas?

Depending of the time of travel, yes. Though this cheese is pretty strong, it should be vacuumed packed. The first signs of spoilage is the tiny white to bluish mold, which is completely fine and not a health hazard, and won't damage the product as a whole (some people eat mold and all, it's a natural occurrence in hard cheese). But it does take a while before it goes completely bad, a few days is safe - And remember, heat will always accelerate this process, so shipping during winter is best!

How does the flavor compare with Locatelli Pecorino Romano?

Personally I prefer the locatelli. The flavor is more intense. It makes the dish! Perornino is second if you cannot get the locatelli. I am Italian and this has always been the family preference.

Is the larger 5lbs or 6lbs?

It arrives as a 3 pound portion. And it is the real thing. Beautifully grainy,salty, and delicious.

How do I keep this cheese after I cut into it?

I wrap a small portion in cheese paper to use. Then I wrap the remaining amount in cheese paper and put it in a freezer bag and freeze it. It could be cut into smaller usable chunks and then frozen, as well.
