Is this heat safe? Could I use it as a trivet in a pinch?

I wouldn't! It's just a nice rubber mat to much drinks on.

How many ounces of spill will it handle?

I have not had a big spill. I use it under a pump pot, which always drips a little. I use this mat every day it is easy to clean and keep my coffee bar neat and tidy. I love it

How to clean if using with stickier substances? Is dish soap unsafe? Would a dishwasher w/o detergent be too hot?

I would think using hot soapy dish water with a brush would be fine. Maybe even soak for a few minutes. Not sure if it's dishwasher safe.
