Is powder food coloring more economical?

It's not the cost, is the lack of wet ingredients. There are some recipes that I don't want to add extra fluid to or it will alter the recipe poorly. To get a strong rich color the powder, sometimes with added gel also, will give you a very deep rich full color.

Can I use this to color white chocolate?

I'm so sorry I have no idea. I used mine to color slime for children. I used it on glue and borax. It worked really well but it wasn't not white chocolate
