can i replace the ball with a 2" ball?

Yes you can put what ever size ball you want too. This is a heavy duty weight distribution bar. High quality and works great. My travel trailer is very heavy and it does its job.

Are installation instruction included with the kit?

Yes, instructions are included. I felt the instructions did a decent job on most parts of the install except for setting the height. The instructions refer back to setting the height in step 3, however, step 3 didn't address setting the height. Be very careful not to "waller" out the holes while drilling for the sway control. I wallered out the first hole and it stripped when I tightened it so I had to use a heli coil to repair it. I would buy this hitch again. Hope this helps.
