Can you just by the hose adapter? as i have the regular azuno.

Would this work to mount tubeless tires on a bicycle?

It would work to put air in the tires. But it will not mount a tire. that would have to be done by a person and some other tools.

Is there a way to adjust the regulator in the gauge? I can only fill my bike tire to 70psi.

There is a gauge to tell you how air you are putting in, it does not auto stop on certain number. You put in air needed to reach your psi.
