Can you use it when you’re not home? Not sure how to turn it off before entering

They are not what I would call a door stop when you are out as you won't be able to get in. You could leave them a little way away so when door opens you can get in stop alarm It stops door dead. I use them when I want to have door open on jar so dog can get in and out of someone pushes door ito open it , it will stop and alarm will go of.

Can you wedge this inside a gate as there is too big a gap in the bottom?

These are really suited for internal doors or inside external doors when you are at home i.e. when in bed. If you try to wedge the unit in a gate the alarm will activate as soon as unit is squeezed.

Can it be placed outside the door to detect someone opening the door from inside ?

Definitely, if your door opens outwards, then it will work as long as no one has nicked it from outside

My door has the rubber gasket worn, so it doesn't hold the door so tight. Could a wind that could slightly move the door trigger the alarm?

Usually slightly move of door will not trigger alarm. In addition, there is 3 level of sensitivities, you can set it to low sensitivity if you think it is too sensitive.
