Can these be used to do Kung-Fu?

I actually do use it to do kung fu, works pretty well, just tough for forms like require a lot of wrist movement (like basic Wing Chun forms).

how do you know what size to order

My wrist measures at exactly 7 inches, so I had ordered the SM/MD since the packaging says it is sized for 5-8 inches. It barely fits my 7 inch wrist. There is NO way this will fit an 8 inch wrist. For larger than 7 inches, take my advice and order the LARGE

I work more than 8 hours per day with a computer. Are this gloves comfy and useful to use when you are working? The package includes both gloves?

Semi-comfortable. It includes only one glove. You have to order a left or right one. It was way more comfortable than the special fitted one the doctor prescribed.

Can this item fit a 190 lb 5'10" man?

I don't believe so, it fit my 5-2 110 pound wife nicely though. I'm approximately your size, a little taller and same weight and I got the "Large/X-large" size and it fits nice.
