Is this scanner capable of scanning artwork, such as color drawings and photography, or is it limited to color documents?

As long as the item being scanned presses flat against the glass ( item is probably flexible so the cover (cover provides a flat-black mat background) can be set upon the item ). Experiment: removed cover and placed 81/2 by 11 Ebay document on the glass. Then placed black fine-bubble packing foam on top. Scanned 600 DPI color. Result has small areas that are fuzzy printing and black background is OK. Placed 1 1/4 inch stack of office paper on top of foam. Scan again. Result looks good. That means that this scanner is good for items that are microscopically flat against the glass. Artwork with thick rough surface paint will have fuzzy areas ( areas away from the glass ). Color or black and white drawings and photography ( microscopically thin images on a flexible medium ) will be OK. Away from the glass is out of focus.

Any options for Scanning XRay film and converted an dicom format?

Unfortunately, the scanner does not support film scanning.

Has anyone had luck with this scanner running on the most recent Mac operating system January 2020?

After many attempts at updating the software as recommended by the manufacturer, we continue to use the scanner with a Mac that is NOT updated to Catalina.
