How long do they keep?....(ie...expiration date?)

They are usually stamped with production date in front. To plan to use it sooner like one day put in the fridge. If you plan to use it later, place in freezer. Order when you feel you are planning to use it right away.

Are these good for frying?

Yes .. a customer did state for frying for dessert and another restaurant user use this to make fried with cheese.

What's not to like?

When I ordered these they sent me dumpling wrappers by mistake. I contacted them and they sent the correct wonton wrappers right away. I will say however that next time we will be ordering the regular size wrappers. These were actually too big so my wife had to trim them to the smaller size. Excellent product however.
