What is the shelf life for these?

Honestly, I dont know about shelf life. I do know that the food i ordered two years ago I just used and it was fine. The dehydrated foods just last.

Do these actually reconstitute well? Some things just don't so am wondering from those who actually use. Thanks.

The hotter the water you soak them in the better. I usually put them into my pot of boiling water and let them steep in it for at least an hour on the edge of the fire before even trying to do things with them. It does help to season the water with salt, pepper, garlic while steeping. The final texture isn't quite like fresh but they do soften up very well. If you're preparing them at home for use in soups or stews about 2-4 minutes in the microwave covered in water works quite well also. I have used the peppers and onions in this manner in potato salad and they remain crisp in the salad and don't fall apart or get mushy. The celery would probably work just as well too.

Im trying to figure out about how far all of this will go. It says 50 cups, but I can't seem to figure out a meals per day/how many days, comparison??

Most of the veggies call for one cup of water for 1/4 cup of veggies. So what I do is supplement my dehydrated meal with 1/4 cup dried veggies of my choice and add an additional cup of water above what the meal calls for. Using this method, 50 cups would last me a very, very long time. I don't know if you're using it this way or not. Most backpackers use them like this.
