Dean Jacob's Creme Brulee Quick Mix

I always made my Creme Brûlée from scratch and if any of you have made it from scratch if you mess up it curdles on you and you have to throw it all away! This product is easy to do, takes a few minutes and I add 1 tsp of vanilla to it and it taste just as good as homemade or better and guest would never guess that I didn’t make it from scratch!

The mix takes a LOT of cream. But when it's cooked and cooled, it has the texture of a fine quality custard, very different than regular pudding. Once cooked the mixture will be thin. At first you might think something has gone wrong but it will set up correctly when cooled. Having a thin mixture makes pouring it into ramekins much easier and the top surface is perfectly flat which makes sprinkling the sugar evenly possible. They also give you a good amount of coarse sugar. The coarse sugar sprinkles more evenly and the amount they give will end up giving you a good medium thickness of glass-like sugar when melted. I always use a propane torch when melting the sugar so I can control exactly how much melting happens. I've tried cheaper brands but they end up being vanilla pudding with sugar on top.
