please confirm the color of this sink protector mat? is it beige or white?

White. I like them & if they get grungy I soak them in water & bleach.

Is this sink mat plastic coated wire or is it all plastic? Could I fold it in half if needed? Rigid with some metal in it or all soft plastic?

The sink protectors are hard plastic, so they can not be folded. If you would like to fold for sink saddle divider protector, it is here (a bigger mat 18”long) : https://www.amazon.com/dp/B09TL8L9VG

The hole in my double sink is not in the center of the sink. Do these come with the off center hole?

Thank you for your question. No, just like in the photo, the hole is in the center of the sink protector.

Does the sink mats come in red

I don't know. Maybe the vendor can tell you.
