Each individual screen is 18" wide.

will I be able to take two panels of to make it 36" wide by taking the hinges off panel without it being ruined ?

Yes, the hinges just screw in. These are great for the money.

Is this sturdy enough to deny a determined cat access to a hallway?

Probably not; the legs are about 3 inches long so I can see a cat slithering under. Might be able to turn it upside down so no gap at the floor. However, if a cat jumped up on it, they might be able to turn it over. Suggestion; we had the same problem and hung a pretty "french door" looking screen door and it did the trick
