Does this press a dimple in the middle so the burger doesn't plump when you cook it?

No dimpler. But have used mine 100's of times and burgers never plump up. I cook mine with indirect heat. That may be why. I don't know.

Is this dishwasher safe?

Yes... This is dishwasher safe... I just use my hand scrubber to quickly wash it... but I could use the dishwasher.It is fast to clean. It makes great and easy 1/3 lb burgers. I am retired and watch my money. This is a smart buy.
