Why do the new plates have a matte coating? compared to a glossy old one that was on my Ender 3 V2?

The matt is more of a textured pattern that helps print jobs stick while printing.

Will it be wise to use some adhesive (thermal tape maybe?) to attach this permanently and not use the clips?

No not a good idea clips work just fine and very stable

when a print if finished that is holo, can i pour epoxy on the glass bed inside of the print for it to cure?

Dude, why would you do that on the bed? What if you printed too thin and it broke, leaving epoxy all over the bed? I dunno man. Your call. Just saying I wouldn’t do it.

will this fit on Ender 3 S1 Pro?

According to the specifications avalable online the build plate size of an ender 3, 3 pro and 3 S1 are the same. So far as I can tell this should fit the ender 3 S1. Mind I am a consumer and do not own the specified printer.
