Will this evaptor off or gum up when used on long term (6mo to a couple years) storage?

I've used it for years and haven't seen it oxidize or get gummy. It seems to keep a "creeping" layer of oil/PTFE available, but adding felt washers to your application (if possible) could help ensure it stays that way.

Can you use this product on plastic gears or is there another product for that?

Yes, I have used it on plastic, composite, and nylon gears with no cases of it attacking the materials. I don't know of anything I wouldn't use it on.

Does this bottle come with a mini applicator hose?

I *have* seen spare application straws, I just don't remember where. There's only 2 or 3 sizes in my experience so maybe a variety pack? Maybe this? https://www.amazon.com/Replacement-Aerosol-Straws-Lubricant-Automotive/dp/B01E2N49B6

Is there a specific version of this they sell for bikes or is this it? Someone told me to get tri flow 3 in1 for my bike.

TriFlow = 3 in 1. That's why it's called TriFlow.
