Pretty much anything that can be fermented can be processed in these crocks. The water seal creates a perfect anaerobic environment for clean, efficient fermentation.

So is this made germany, though it looks identical to the shoddy tsm crock that has started appearing by many other rebrands recently? german really?

This is an outstanding crock that is made in Der Fadherland...ha ha Germany. The TSM is Chinese I believe and the glaze may or may not be food safe...who knows? I had a US crock that really wasn't good, Lehman's I think, but this is the best crock I've ever owned, the handles are plenty good enough to carry full.

the 15l Nik is 16.25 by 11.5 but the amazon dimension is 12.6 by 12.6 what gives are these the real Nik Schmitt? or nock offs?

I don't recall the dimensions but I returned the pot because I thought it was of poor quality. The finish was pretty rough.
