For my water's tds of 100 ppm in, what tds ppm can i expect at the end of your stated 100 gallon capacity for the 2 stage 10x2.5?

100 ppm in should get 0 ppm out pretty easy. After the expected 100 gallon lifespan it should slowly tick up 1 to 5 ppm each time. It won’t go back to 100 ppm quick, but slowly.

How much resin does each unit hold for replacement?

Each housing holds approx 16 to 20 OZ.

where do you get the resin to refill the filters ?
