Why would it work for a while then start reading high amounts, more than double?

There are 2 reasons may cause this problem: 1. The liquid depth is over the sensor measure range 2. Water gets in the pipe of the cable

Is it usable with fuel tanks (deasil)?

This one can be used in diesel, just the working life will be shorter than used in water. You’d better choose the sensor which is especially designed for diesel, if you need, please contact us by 415529869@qq.com .

What is the max temperature this item can operate at? How does it perform with higher viscosity liquids (ex. Grease, engine oil)?

This sensor max working temperature is under 80℃. We have another type sensor which is designed for high temperature liquid(up to 280℃.
