Will the extra overhaul storage fit a larger bulkier winter sleeping bag?

The overhaul system can fit anything you can stuff in-between the bag and the frame, so I would assume yes it can. However, by separating your weight in the pack from your body by putting a bulky item in-between the pack and frame you are bringing the weight of your backpack further away from your body which is not going to make carrying 30-40lbs any easier. So take that into consideration too. I preferred to stuff sack a bag down and put it into the backpack itself, you could potentially roll and hang it underneath too, really depends on how bulky it is.

Will this be a good hunting bag or should i go bigger??

IMO the overload feature will give you more than enough room to carry a kill, especially if you go with a buddy that can help. It really depends on how much gear you also carry. So if your gear requires more than 50L, go bigger. Also, this pack doesn't have a dedicated rifle carrier. Mystery Ranch makes bags designed for rifle carry, if I were you I would look for one with a built in rifle option, that also has the overload feature.
