Review: Smooth, Fast, and Consistent – The Best Stones I’ve Used - I’m a big fan of Naniwa Chosera sharpening stones. The most classic and widely recommended grits among users are #400, #1000, and #3000. They were the first ones I bought, and I absolutely loved them — no complaints at all. Out of curiosity, I decided to try other variations in the Chosera line, such as #600, #800, and #2000, and I found subtle but very noticeable differences among them: Chosera #600: Very similar in performance and feel to its close sibling, the #400, but it leaves a slightly finer finish and provides a smoother sharpening experience. Ideal if you want to avoid the more aggressive abrasion of the #400. Chosera #800: Closer in character to the #1000. The polish it produces is quite similar, but its cutting speed is higher, making it a great intermediate step between #400 and #800. Chosera #2000: The finish is close to that of the #3000, but it feels smoother and clogs less easily. Perfect for finishing commercial kitchen knives with moderate hardness. Personally, the #2000 has become one of my favorites in the entire Chosera line. In summary, every Naniwa Chosera stone delivers exceptional quality, with fine differences that let you tailor your sharpening process to your specific needs. If you’re passionate about precise, professional sharpening, these stones will never disappoint.
Review: A very nice stone to ownf - I have found that some steels can’t hold a fine polished edge. But can hold a good working edge. Like maxamet steel. Why do the work if it’s going to loose the edge the first day you really use it. Maxamet will hold working edge for a very long time. But there are other steels some what like that. Put more angle , for a thicker edge , instead of a fine thin edge, and use a smaller grit like this 600 stone, which I think is perfect for a working edge. I sharpened a knife today, and after I used this stone , I could still shave hair with it. But it is still able to bite hold of what your cutting. If that makes sense.
