Will vanilla bean pass through this?

If you're talking about when you scrape inside the vanilla bean, most of it won't pass through since the insides of the vanilla bean clumps together.

What is the best pestle (size/brand) to use with this product?

Use a ladle. The size of the ladle depends on what you are pressing. I commonly use an 8 oz ladle. If you have very little in it, you may want that 2 oz one like the other answer said, as it would get all the way down into the tip of this quality tool. Your have to use a good quality ladle or it will break. Otherwise, go to your local Ethnic place, we have Vietnamese and different Hispanic groceries. They usually carry large petals like you may want for this. Be gentle with a pestle. You DO NOT want to bust the stainless steel screen on this strainer using too much force.

Would this work for straining milk for dry curd cottage cheese?

I suppose so. It is a very fine weave on the mesh basket, so I would think it would handle delicate stuff like cottage cheese nicely.
