Without the bow sprit, how long is just the hull?

26 inches. That is from the very front of the bow( where the bow sprite rests on) to the stern. That piece sticks out about 1 1-2 inches from the extreme end of the foredeck

Where can I find the wood model of this ship?

Check your local area hobby shops or go on line, enter wooden ship models to find what you want.

Do the instructions include the option to rig without using the sails?

It does not include an option on the sails. But the sails go on last and this is your model. So if you don’t want to put on the sails it will still look fine. Make whatever adjustments that you want. Have fun and let your creative side direct you. One word of caution, the deck comes in three sections. Make double sure you have the center section going the proper way. I goofed and put it in backwards. I have been paying for this mistake all the way. Read the instructions very carefully and do a dry fit before applying the glue.
