Is this product ok to use on wool carpets - that's the only thing not listed in the description!

I used it successfully on mine. However I recommend you try it out first on eg a piece of identical carpet you may have used as floor covering in a cupboard. As always as with any kind of woollen material, never rub excessively. If you think you applied too much and the area feels too damp, just use kitchen roll to PAT gently to absorb excess.

Is this cleaner safe to use on a silk persian rug?

my mother used a toothbrush and vegetable based soap on one given to us by my uncle after his puppy had fouled all over it. That was forty years ago and it is still bright and beautiful. i had a specialist cleaner clean it some 5 years ago - he adored it and said he only uses vegetable based soap because of the dyes.

Will it clear sour milk smell

I should imagine it would if it can get rid of old urine stains and smell Yes. I have bought 2 of this item and about to order my third as having a new grandson at home will be very useful With vomiting baby Milk and little accidents down the line hope you find this helpful.
