Does the adapter come out of the case to use with larger physical drives?

No, it's one whole thing so you can't remove the care from the adapter. But doesn't mean you can't careful cut out the case part then use it for bigger size drives.

I removed the hard drive from my daughters laptop because it wouldn't turn. Will this allow me to retrieve the data on that hard drive?

I use this enclosure for a friend who’s computer died. We pulled the drive and put it in the enclosure and he was able to save all his data. So, it really depends on if the drive is still functional or not.

Has anyone ever hooked one of these up to their Nintendo Wii, and is the cord long enough for the hard drive to lay vertically beside the Wii?

I can't tell you if it will work with a Wii. The drive case is a USB 3.0 standard device and I have tried some older and newer 2.5 inch drives in it. Both have worked. I have also formatted a drive and that works on both MAC and PC. The USB cable is a unitized 4 inch pigtail that tucks into the case when not in use. I'm really happy with the design as you can easily swap drives in and out of it without tools. I have tested it using a 4ft USB extension cable and that also works error free.
