Hello Ms. Ryan,... I've never used pickling lime to make homemade noodles, but there is a Glucomannan Flour that can be used for homemade noodles, purchased at some health food stores , and I've never used that either. I just put an egg in mine and go on with the show. I use Mrs. Wages Pickle Mix, Xtra Crunch to make my homemade pickles this year because I've had an abundance of cucumbers that needed some good crunch. I was a little leery of the Calcium Chloride in Mrs. Wages Pickle Mix ( only because that is used to de-ice roads in the winter and it gave me pause to use it in my cucumbers for extra crunch ), however, it worked fine. I say, " Nothing Ventured,....Nothing Gained ", and I wish you Good Eating with your Noodles and see how they turn out, but first I would check with a good reliable Health Food Store, " just in case there is a better option. I hope I haven't confused you, but I have had cucumbers on my brain since May when they started producing and I am now the proud owner of 4 different kinds of pickles with quarts and quarts lined up in my pantry and I'm just ready for maybe some kale or turnips or whatever ! Anything but cucumbers right now. Thank You, Sandy, with the crunchiest cucumbers in Texas !!
