Will this keep food cold in a outdoor farmers market setting?

These boxes are fantastic. Should stay cold up to 5 hours or so, assuming you don't keep opening and closing it. It doesn't heat or chill, only maintains the temp that it went in at. I suppose that if you put a tray of ice in there, you might get a bit more out of it.

If I purchase the cambro go and use half pan and/or full pan aluminum trays will I need a thermo barrier?

You just need the hotel pans. Assuming that everything in the box is either hot or cold.
