Is it unholy to eat these for a snack?

It depends on why you are eating them as a snack.They are not yet consecrated so they are not sacraments- it is not yet Eucharist. Refer to the CCC 1355.

I have a child with sensory issues who struggles with Communion every week. Would these be appropriate so we can practice eating them whole?

These are large hosts that the priests break and use. They are 2-3/4” in diameter. I would recommend the 1-1/8 or 1-3/8” that we offer. These are the ones they would use in church.

Is there difference in ingredients on the whole wheat and the white bread?

None that I am aware of other than the fact that whole wheat wafer contains the entire wheat berry whereas the white does not, the result, of course, being higher fiber content for the whole wheat wafer.
