Fix your spelling. There are natural amounts of cadmium and lead in soil. Cocoa as well as many vegetables like beetroot, spinach, sweet potato pick up trace amounts. Not much to worry about. Its a good idea for manufacturers to test their chocolate and remove it, but this is not the only source of heavy metals. **Q: Who grows this caoco for your product? From where is it sourced?** A: Product page says, "imported from the Dominican Republic." **Q: Why does this product not have a USDA seal? Anyone can say it is organic, but without the seal there is no proof of supervision.** A: Great question and thanks for pointing that out! I contacted the company and they said they will be adding the USDA Organic logo to the packaging, as they have certification from CCOF (CA Certified Organic Farmers), one of the USAD NOP-approved certification entities. **Q: Is this cocoa powder Certified Fair Trade? I see it comes from Peru, where child and slave labor seems less common than in West Africa. Is this true?** A: There's no reference to Fair Trade certification or practices. When I started buying organic cocoa locally a year or so ago, I had trouble finding ones that tasted right. They were somewhat flat and mild in taste, and even if I used twice the amount called for, I could never get the right tones, just too much bitterness without the right flavor. I finally decided that maybe it was the pesticides that had made the stronger flavor and I settled with the least objectionable organic cocoa at Whole Foods. Not so!! I was lying on the couch with a fever one day with no strength other than to browse the internet (a dangerous and expensive thing when you land here on Amazon and see so many things you "need"!) I saw this cocoa and read the reviews. Some seemed to think the flavor wasn't all that grand, but others loved it. I figured the ones that didn't like it all that well had discovered what I had about organic cocoa. The price was SOOOOO much better than what I was buying - even on sale! - that I figured I would jump in and buy a 5 lb bag hoping the high reviews were actually correct. I am so glad I did! I was paying over $8 for a half a pound when it wasn't on sale. This is $6 for a whole pound!! I opened the bag up today and put it in a very large jar and a couple of smaller ones (if you do this, put the jar in your sink - it made my klutzy transfer a snap to clean up.) The smaller jars are great for easier regular use and I refill one when it is depleted. I'm glad I had planned on the transfer, because the ONLY THING I DIDN'T LIKE ABOUT THIS PURCHASE (in caps so people can quickly see it) is the bag it comes in does not zip back up particularly well. I would have been devastated to have it ruined by damp air. At the very least, plan on several ziplock bags to store it in if you get the 5 lb bag. I didn't knock a star off for this, because the cocoa is JUST THAT GOOD. I dipped my finger in some of the spilled cocoa powder and tasted it as I was making some hot cocoa. I knew immediately that this was a spectacular purchase! The flavor was just right! Bitter, of course, as unsweetened cocoa should be, but intensely flavorful with actually just a hint of sweet! The hot cocoa was so delicious. It left a pleasant lingering chocolate taste after it was gone. Do yourself a favor and ditch all the other cocoas you have been buying. Get this one. Mmmmm.
