How does this rough surface on the pans allow for non stick cooking?

Best. Pans. Ever!!! Not a rough surface. Just looks rough. Non stick. Light-weight. Love that the handles stay cool.

This says it stainless steel on the bottom . is it ? the other pan i wanted to buy was described the same but said aluminum bottom . ? confused

The bottom appears to be stainless steel. However the bottom is 1/4 inch thick. My guess it's 1/4" aluminum covered with a stainless steel bottom to prevent discoloration and wear. Aluminum is used when you want to transmit heat quickly and evenly to the pan/pot.

What are diameters of cooking pans?

Sauce pan is 7 (purchased separately) 9.5 frypan is 8" diameter, 11 inch frypan is 10" diameter. These are excellent pans. We are very happy with our set and clean up is great (no stickys)

"Is it suitable for an induction stove?"

Yes, it is. Our product can work on all kinds of cooktops, including induction stove.
