Once opened, how long do the bread crumbs stay fresh?

A long time. I have never had a problem with them becoming stale. They just need to have the air pushed out of the bag then seal the bag well.

Can you make meatloaf with this? i used a different brand of gf breadcrumbs and it fell apart. will this hold the mealoaf together like "normal" bc?

yes! I use this for everything. It is the best I have ever used. I even dip fish or chicken in it before frying or baking, (along with whipped egg). You won't regret buying this product.
