So what does this stuff taste like anyway, like if you were to taste it by itself?

On its own it has a unique taste which I would say is rather bland. On food it enhances the flavor. I only use it on meat, my wife puts it on lots of things like popcorn etc..

The name says it all. MonoSODIUM glutimate (MSG) It is the the sodium salt of glutaric acid. However, that said, almost every salt contains a few molecules of other counter ions, such as potassium,, magnesium, etc. It would be hard to ascertain the ionic purity without running an AA (atomic absorption) assay on it, or maybe a GC (gas chromatography). Isn't chemistry fun!!
