Once the projector is hanging from the ceiling using the stand, is it easy to deattach and put it back on multiple times?

Very easy to deatach. I take it off quite often from my ceiling. It has 3 detachment parts I believe. Because I have a projector screen outside, so I take off my projector quite often. Your gonna love this ceiling mount. I know I did.

Could this be used as mount on a flat surface?

Yes it can be used on a flat surface, its very well constructed and very strong !! I am very pleased with the quality of this stand.
