Are these definately inset door hinges as the video shows full overlay hinges

That sounds a bit of a contradiction! Overlay doors fit on the outside of the frame like kitchen cupboard doors. These hinges are used to fit the door in alignment with the level of the frame. In other words the doors are therefore inset, within the frame, so that the outside surface of the door is flush with the surface of the frame.
