Does this fit a 2" sch 40 pvc pipe? The picture doesn't show a 2" size.

Yes, that is correct. This coupling will fit 2-inch plastic (including sch 40 pvc) to plastic, plastic to cast iron or cast iron to cast iron.

I was wondering why some couplings are made with rubber while others with pvc. isn't rubber usually more flexible? what are the pro/cons of either?

The rubber band clamp style coupling is an easy on the fly repair that some would consider temporary and the rubber band clamp style coupling can not be used on a pressure line, only on a vent line or drain line. The PVC coupling is glued in place, is a permanent repair and can withstand the normal pressure of a home water supply system.

What distance will coupling span? What is the length?

The 2” coupling is 3.5 inches from end to end. Each end of the pipe should be inserted at least 3/4 of an inch to allow the clamps to seal around the pipe. Witch allows you to join pipes with up to a 2” gap between them.

can I use it on 63mm pvc pipe?

I do not think it will fit. You need 2.5 inch.
