Unfortunately, only 1 option with blade, the shredded pieces is too thin, lost texture, NOT as I expected, so I am not really happy for such expensive item. I do NOT recommend this item. **Q: Would this work to julienne cucumber for a Kani Salad** A: I never made Kani salald, but from what I see in pictures, yes, this slicer will Julienne cucumbers thinly. The holder is useful for protecting the fingers , and the Swissmar does not come with one.. I use one of these daily .
