Dexter 19193 9-Inch SaniSafe Fillet Knife with Sheath

If you clean any amount of fish or game, or do lots of cooking then you MUST already know how outstanding these knives are. I have many different styles of Dexter Russell sani-safe knives and it's all I really care to use. When I was younger I worked in the seafood industry at the docks and these knives could be found everywhere. They are the cadillac of filet knives in my opinion. Razor sharp, quality steels, and very easy to re-sharpen. You cannot go wrong with Dexter-Russell knives!!! They require a little bit of care due to the carbon steel content but the quality is top shelf!!!

My husband and i have used this knife for the last number of years replacing the electric we use to use for filleting salmon , simply put it is awesome, super high quality steel sharpens great , stays sharp, and is flexible, great no slip handle, well made , would highly recommend for large fish.

Great knife. I use it to fillet fresh caught salmon and it works beautifully. It was sharp out of the box and continues to stay that way. Very good product.

Great for filleting fish or using for cutting venison meat up

I learned from the mates on party boats about Dexter knives, after watching different mates on many boats using the same knife , I knew I probably couldn't go wrong and I was right, great knife that holds its edge, only gripe is that I don't think the sheath was made for this knife, it goes in but doesn't seem to fit correctly, otherwise it's a terrific knife.

For the money you spend on this knife, you aren't going to get a better one. I keep my knife sharpened after every use, and it'll still shave hair. Filets great, bends well, and holds that edge. I love dexter knives. I like my cutco knife a ton too, but money for money, I think the Dexter wins out.

Love the long blade and how long the blade keeps its sharpness.
