Q: Plastic okay with Arizona weather up to 125 degrees in the sun all day?

The plastic will be fine. Humans...not so sure! Get indoors a bit!

Q: Why won’t the tank work upside down?

Because of gravity. Yes it's pressurized, but not THAT much. And when you take into account that it's 8 gallons, it's just not going to work upside down. It WILL work on its side however. But again, you need to have the spout on the lower side.

Q: Will the mounts support the tank being mounted upside down to the rack? Below a roof top tent for example.

They would support the tank, but it won't work upside down. We are working on developing a hanging mount for exactly what you're talking about. But in the meantime you'd have to fabricate your own.

Q: Can you connect 2 of these together to have combined 16 gallons of water onboard?

Due to the pressurization that won't work. But, you can certainly have two 8s onboard!
