Is it a pain to get the eggs out of the little compartments? I would think this would break the yokes.

Yes it is a pain to get the eggs out. Rather it is hard to turn them over and get them back in the hole to cook on the other side, if that makes sense. I think you would need a special spatula that is very thin to do it right. My spatula doesn't work well, but occasionally I get it right and the eggs are perfect.

If I put some water in the cups, would it be possible to make poached eggs?

Yes! The cups are a bit shallow for that but it totally works. I tried filling the cups halfway up with water, waited for the water to simmer, then gently dropped the eggs in. Perfect poached eggs. Keep an eye on the simmer so the cups don't boil over. About setting 4 or 5 on an electric burner. 4 minutes to perfect poached egg.

Will this pan work on an induction burner?

Definitely not. Only Iron based pans that a magnet will stick to will work on an induction burner.

Made in Korea. I found it works great for me to make equal thickness and size of EggFooYoung patties.....that's what I bought it for. Even though I don't make it often, I am pleased to have this pan which makes the job and results go so much better. I usually make a big batch and then freeze & vacuum seal some patties for later use.
