Yes, you can easily customise any button (except the Program button I believe.) The keyboard has an user-friendly app which lets you simply select the desired key and enter the key you want to replace it with. And it allows you to save multiple layouts and bind them to shortcuts, so you could for example switch back and forth between a US and a UK layout by pressing (Program + 1) and (Program + 2) or Program + whichever number/letter you wish to use.

It allows you to assign any key position to any key, so yes you could.

Can you change the qwerty over to dvorak on all versions? it comes in different versions, why if they’re interchangeable.

You should be able to switch every key (except Program) on all versions. The layout you buy is simply cosmetic - if you're touch-typing it shouldn't really matter. I am using qwerty keyboard with almost every key switched and it's fine (except when other people try to use the keyboard).
