Q: What is the thread pitch of the temperature switch

I am pretty sure it is pipe thread. I think the switch itself is 3/8 in. pipe and the bushing is 1/2 in. pipe.

Q: at what temp does fan energize,and is this adjustable,

It will send the signal to the relay at 200 degrees coolant temp and turn the fan off once it reaches 185 degrees coolant temp. it is not adjustable, that is the temps it will happen at +-1 degree

Q: Whats the best temperature range sensor for a 396 Chevelle

I would put in a 180 degree thermostat and see what temp it goes up to. I would set the fan around 195.

Q: would this part work as a coolant temperature sensor?

If you mean for a gauge, no, it is strictly a switch. It would work for a light, but would turn it on very esrly.
