I love this. Inegar mixed with chili oil for dipping my dumplings. Has a sweet edge to the vinegar that lowers the sour notes.

Yes, it has dye--but this is the best option I've been able to find in U.S. stores
This does, in fact, use red dye to make the vinegar red rather than starting with red rice and having it be red naturally.I'm not too wild about this, but four stars given that 1. It tasted great when I used it to make a dumpling sauce with shaved ginger (just shave the ginger and add it!) and more importantly 2. Koon Chun is a reputable brand and this vinegar is the best version I've been able to find in the U.S.All the other ones I see on the shelf in my area are labeled in Chinese only, and may have dye too for all I can see.I probably would still be on a hunt for a better brand, trying to translate the other labels, if it weren't the fact that I saw on an instructional video that this is the U.S-available brand recommended by Eileen Yin-Fe Lo, author of theThe Chinese Kitchen: Recipes, Techniques, Ingredients, History, And Memories From America's Leading Authority On Chinese Cooking and ten other great cookbooks. Ms. Lo, by the way, is a real stickler--just about the fussiest most traditional person around, so if she says this is the brand to get, she probably doesn't know anything better in the U.S.I don't think Amazon will let me link the video but if you YouTube Chinese Market Tour and Eileen Yin-Fe Lo you'll find a video filmed about a year ago in which a journalist takes her on a tour of a store. At the 5 minute 40 mark, Eileen pulls this exact bottle of Koon Chun Red Vinegar off the shelf and says it's good for a lot of things, including Hot and Sour Soup. She also says it's traditionally made from red rice. When the journalist suggests that this brand uses some dye to help it along, Eileen appears to assent but does not change her recommendation.So, for now, unless someone sends me to a better alternative, this is my brand of red vinegar. If I find a better one I'll come back and post here!

FAKE RED VINEGAR
Read the ingredients. FD & C Red #40. No where does it say rice vinegar. I wouldn't serve this to Hitler. Another Chinese ripoff

perfect for dumpling sauce
For years, I've used this brand red vinegar with little bit of shoyu to make a sauce for my dumplings. Good stuff.
